CHILD DEVELOPMENT

This course will help prepare students for jobs in childcare or for child development professions, including teaching.  Students will participate in hands-on experiences and instruction in physical, emotional, intellectual, and social development of infants, toddlers, pre-schoolers and school age children.  Class projects may include “Baby Think It Over”, classroom observations, learning experiments and cooking with children.

CULINARY TECHNIQUES

(11-12)                        .5 credit                       1 semester                  None

This course is designed to help students understand kitchen workspace, cooking tools, and cooking techniques.  Food science will focus in the following areas:  Fruits and vegetable, grains, dairy and eggs, meat, baking, and food combinations.  On sight Serve Safe certification is available for students receiving adequate scores.  Labs are scheduled for once or twice a week.  Worksheets, quizzes, exams and projects will be a part of student evaluations.

EARLY CHILDHOOD EDUCATION  PRACTICUM

(11-12)                            .5 credit                   1 semester             Instructor Approval

This course is for those students seriously interested in an education career.  The students will be placed with an elementary teacher and receive hands on experience.  Students will be working directly with elementary students in various educational areas.  The students will also learn to interpret written directions from a classroom teacher. Projects will include lesson development, lesson preparation, school board meeting reports, and staff meeting reports.  Other projects may include bulletin board files and parent correspondence file.  An “A” in Child Psychology is a prerequisite for this course.

FIBER ARTS

(9-12)                          .5 credits                     1 semester                  None

This course will teach basic quilting techniques including foundation paper piecing, traditional quilting, appliqué, hand quilting, and machine quilting.  Individual projects will be required as well as group projects.  Students will keep job skill logs and set time management goals.  Students will need to purchase some supplies depending on projects.

LIFE EXPERIENCES

This course will cover home life skills including parenting, meal planning, shopping, laundry, cleaning, apartment finding, budgets, insurance and home maintenance projects, auto maintenance, income taxes and check stubs, credit, and checking accounts.  Students will learn through hands on experience, research, and class discussions.  This class is suggested as a base class for the others.

MEAL MANAGEMENT

This course is designed to teach the students meal planning, shopping techniques, food labels, nutritional requirements, mealtime customs, theme meals, catering, convenience foods, and foreign foods.  On sight Serve Safe certification is available for students receiving adequate scores.  Labs are scheduled for once or twice a week.  Worksheets, quizzes, exams, and projects will be part of student evaluations.

HUMAN RELATIONS

This course is designed to help students with building a positive self-esteem, improving decision-making skills, developing communication skills, and conflict management techniques.  An intense career unit will help students with entry-level job skills.  Teen issues to be discussed may include teen marriage, teen pregnancy, divorce, dating and relationships, date rape, substance abuse, stress, and many more.  A unit on the human reproductive system will be covered.  This course does not count as a vocational credit.

INTERIOR DESIGN

This course is for students wanting to expand their visual awareness and learn the basics of design within the home.  This would be a great opportunity for students interested in architecture or fashion merchandising as a career.  The elements and principles of design will be taught individually and analyzed.  Individual projects will give students hands on practice.
